Instructions

1️⃣ Preheat your oven to 350°F (175°C).2️⃣ Line a 9x13-inch baking pan with parchment paper for easy removal.3️⃣ Make the buttermilk: In a small bowl, mix the non-dairy milk and vinegar. Let it sit for a few minutes to curdle slightly.4️⃣ Mix the dry ingredients: In a large mixing bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.5️⃣ Add the wet ingredients: Pour in the oil, vanilla, and the milk-vinegar mixture. Whisk until just combined and smooth—don’t overmix.6️⃣ Bake: Pour the batter into the prepared pan. Bake for about 30 minutes, or until the center is set and a toothpick comes out clean.7️⃣ Cool: Let the cake cool in the pan for 20 minutes. Then carefully lift it out using the parchment paper, flip it onto a large platter or board, and peel off the parchment.8️⃣ Trim & Frost: Use a serrated knife to trim the edges if desired for a neat rectangle.
