There’s nothing quite like the smell of pumpkin bread baking in the oven on a crisp fall day. This version is moist, flavorful, and comes together so easily — plus, it’s allergy-friendly and refined sugar-free (unless you go for the glaze on top… which, honestly, is worth it).

One of my favorite things about this bread is how flexible it is:
Flax substitute: If you’re allergic to flax, try another egg replacer. Unsweetened applesauce also works beautifully — use about ¼ cup in place of the flax and water mixture.
Oil substitute: If you can’t do coconut oil, swap in another oil you like, or go with melted vegan/non-dairy butter.
