Cinnamon Loaf Bread



Y'all, I have tried and tried to make Gluten free and allergy friendly bread. I have had so many failed attempts! I decided to try a mix from Mom's Place Gluten free and it was a WIN!


 Things I love about using a mix:

-It's EASY.

-I don't have to buy 12 different (expensive) flours that I may never use again- 

It was so much cheaper to try a $6 mix than buy new flour!

-Saves time- the mix has been tried and tested already!

-It doesn't make a giant mess! No measuring spoons or cups or flour everywhere :)

 

Mom's Place Gluten free is a small business I love. Their products are made on dedicated gluten free and nut free equipment. Some of their products do contain dairy and egg- so if you buy anything from their website…double check ingredients! Many of their mixes call for egg/dairy but I substitute with egg replacer and non-dairy milk. I've only tried the bread and pretzel mix- not sure how the subs work with other mixes.  Their mixes are also available on Amazon, but it's cheaper on their website!


 


Here is how I made the bread! I basically followed the ingredients on the package but substituted allergy friendly ingredients!

 

You need:

1 Mom's Place "I Can't Believe These Aren't Wheat!" Gluten-Free Rolls or Bread Mix

6 Tbsp of Aquafaba (the juice from a can of chickpeas!)** (see note below)

3 T melted Vegan Butter

1 c warm non-dairy milk (I used oat)

¼ c warm water

  For the cinnamon swirl: mix 1/4 c granulated sugar with 1 Tbsp of cinnamon.

To Make: Beat together wet ingredients for about 3 minutes until they are light and fluffy!

Slowly add in mix and continue to beat on low. Add in yeast and the bread mix. Turn mixer to high and mix about 3 minutes. Spread 1/3 of batter in greased loaf pan. Sprinkle with 1/2 cinnamon sugar mixture. Spread another 1/3 of batter on top and sprinkle rest of cinnamon sugar mixture on top. Top with remaining batter and let rise about 45 minutes. Then it's ready to bake! Bake at 375 for about 50 minutes. The last 5 minutes of baking I brushed with some non dairy butter and sprinkled with brown sugar. Let cool completely before cutting. Enjoy!

 

P.S. My Kitchenaid mixer broke a long time ago so I used the cheap $10 hand mixer from Walmart and it worked great! :)

 

See how simple it is!? I was blown away by how simple and delicious it was. If you make it, you've got to let me know how it turns out!

 

***Note: if you can't do aquafaba (chickpea juice), you can sub with another egg replacer. For the cinnamon bread, I used Bob's Red Mill egg replacer and it still turned out delicious. Aquafaba makes it fluffier, so if you can use it, I'd recommend it. (Also, if you aren't allergic to eggs, use those- they would likely work best!)
