These are my new favorite treat! This recipe makes a full 9x13 pan, so I usually end up dividing it in half. My favorite way to bake these is in a silicone mini loaf pan or silicone brownie pan. They literally pop right out and the ganache sets perfectly!


A few notes about the recipe-
I used flax as an egg replacer but if you are allergic to flax, you can sub with a different egg replacer. I used cold brew coffee (it enhances the chocolate flavor) but you can sub the coffee with non dairy milk or water.
I like to sweeten with coconut sugar so these aren't overly sweet (they are already rich enough with the ganache-) but if you cannot do coconut, you can sub with granulated sugar!
If you cannot do the corn syrup in the ganache, you can leave it out. The corn syrup makes glossy and hold together a little better but it's still delicious without!
