Surprise inside loaf cake

There’s something extra special about slicing into a simple loaf cake and discovering a surprise hidden inside. I’ve been wanting to make a chocolate loaf cake for a while now — something rich, cozy, and perfect for sharing — and this time I decided to make it a little more fun with a heart baked right into the center.

I had big plans to naturally dye the heart for that classic Valentine’s Day pop of red… but let’s just say my natural food coloring experiment didn’t quite deliver the vibrant color I was hoping for. If you have regular red food dye on hand, this would be absolutely adorable with a bright red heart peeking through each slice. Still, even without the bold color, the sweet little heart inside makes this cake feel extra thoughtful and festive.

What I love most about this recipe is that it’s allergy-friendly without sacrificing flavor or texture. It’s deeply chocolatey, perfectly moist, and just sweet enough — the kind of loaf you can serve at a Valentine’s gathering, tuck into lunchboxes, or enjoy with a cozy cup of coffee. Whether you go all out with the coloring or keep it simple and classic, this chocolate loaf cake is such a fun way to bake a little love right into every slice. 💕

I used a small loaf pan. I also made half of the heart layer recipe but it didn’t quite make enough for the whole loaf pan. It’s up to you to make the full recipe or halve the heart layer. You will definitely have vanilla cake leftover after you cut out the hearts. It would be great for cake pops or just a snack :)

I used a heart cookie cutter than was just about as tall as my loaf pan- just a little smaller. I ended up using a knife to cut around the heart cookie cutter at times if the cake felt like it was cracking a little bit. You can see the video on my Instagram page showing how I lined up the hearts in the loaf pan before pouring the chocolate dough on top. I also used canned chocolate frosting to make it easier but you could definitely make your own!

Enjoy!
