Red, White, and Blueberry Strawberry Muffins for the Fourth of July

Ingredients
Dry:
2 cups gluten-free 1:1 baking flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
Wet:
1 cup unsweetened non-dairy milk
⅓ cup dairy-free yogurt
¼ cup avocado oil or canola oil
1 tsp apple cider vinegar
2 tsp vanilla extract
Fruit:
1 cup chopped strawberries (fresh or frozen, cut in small pieces)
1 cup blueberries (fresh or frozen)
Optional Vanilla Glaze:
½ cup powdered sugar
1–2 Tbsp non-dairy milk
Splash of vanilla extract
Directions
1️⃣ Preheat & Prep Preheat your oven to 375°F (190°C). Line a muffin tray with liners if not using a silicone pan.
2️⃣ Mix Dry Ingredients In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
3️⃣ Mix Wet Ingredients In a separate bowl, whisk the non-dairy milk, dairy-free yogurt, avocado oil, apple cider vinegar, and vanilla extract until smooth.
4️⃣ Combine Pour the wet ingredients into the dry ingredients and stir until just combined—don’t overmix!
5️⃣ Add the Berries Gently fold in the chopped strawberries and blueberries. You want those pops of red and blue in every bite!
6️⃣ Fill the Muffin Tin Divide the batter evenly among the muffin liners. If you want them extra pretty, top each one with a few extra strawberry pieces and blueberries before baking.
7️⃣ Bake Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.
8️⃣ Cool & Glaze Let the muffins cool completely. If you want a little extra sweetness, drizzle them with the simple vanilla glaze. Just mix the powdered sugar with 1–2 tablespoons of non-dairy milk and a splash of vanilla until smooth, then drizzle away.
