Snow days pretty much guarantee I’m baking something. If I’m stuck inside anyway, I might as well turn on the oven and make the house smell good.
This quick gluten-free bread is one of my favorite easy recipes. It comes together fast, uses simple pantry ingredients, and tastes great any time of day. It’s the kind of bake that doesn’t require a plan — just a bowl, a few basics, and not much patience.
You can bake it as a loaf or turn it into muffins, depending on what you’re in the mood for. It also happens to be gluten-free, dairy-free, egg-free, soy-free, and nut-free, which makes it an easy one to share with pretty much anyone.
Note:
This bread is not very sweet. If you would like a sweeter flavor, I’d recommend using brown sugar instead of coconut and increase the sugar to 1 1/2 c.
