Easy Cozy Dinner- Potato Soup and Rolls 🩷

Some nights call for comfort that doesn’t ask a lot of you. This was one of those meals—the kind you throw together on a cold evening when you want something warm, filling, and quietly satisfying. I made a dairy-free creamy potato soup the other night, and it was so good. Cozy, simple, and surprisingly refreshing in that clean, wholesome way that makes you want a second bowl without feeling heavy.


And because soup always deserves good bread, I paired it with these easy dinner rolls that honestly might become a weeknight staple around here. The dough is the same basic batter I use for my cinnamon roll bread, just a little thicker and handled a bit differently. Same familiar flavor, totally different vibe. Soft, fluffy, and perfect for tearing apart and dunking straight into soup.


What I love most is how unfussy this meal is. The rolls come together quickly and can be ready start to finish in about an hour—making them a realistic option even on busy evenings. It’s one of those back-pocket bread recipes that works with just about anything, and once you make it once, you’ll see how easy it is to keep coming back to.

Note- if you don’t have an immersion blender- you don’t have to blend the soup or you can use a traditional blender :)
