I used the Miss Jones gluten free Spice Cake Mix I found at Walmart. If you need a Spice Cake mix from an allergy friendly facility, the Namaste brand is a good choice! You can also use a traditional gluten free vanilla cake mix and add extra spice (cinnamon, nutmeg!)

Note: several have asked about using eggs instead ahead of egg replacer in this recipe. Yes- you can certainly use eggs! If using eggs, omit the egg replacer and use two eggs in its place. Also reduce the apple cider to only 1 Cup. If you aren’t gluten free you can also use a regular spice cake mix :)
