Dairy-Free Pumpkin Spice Ice Cream Sandwiches (Allergy-Friendly!)




Looking for the perfect fall dessert that’s cozy, allergy-friendly, and completely dairy-free? These pumpkin spice ice cream sandwiches are a dreamy treat with a festive twist. Instead of the usual cookie base, they’re made with a

crunchy, warmly spiced ginger snap crust that pairs beautifully with the creamy pumpkin filling.


The best part? They’re safe for common allergies—gluten free, dairy-free, egg-free, and nut-free—so everyone can enjoy them.



How They’re Made



  • Pumpkin spice ice cream: A silky blend of pumpkin puree, non dairy heavy cream, dairy free sweetened condensed milk

  • Ginger snap crust: Crushed gluten free ginger snaps mixed with vegan butter to hold everything together.

  • Assembly: Press half the crust mixture into a pan, spread the pumpkin ice cream over it, and top with the rest of the crust. Freeze until firm, then slice into sandwiches.

On to the recipe! If you cannot find gingersnaps,

You can use any cookie as a crust! If you want the ginger taste, you could just add some spice to the butter when you make the crust!
