Dairy-Free Pumpkin Spice Ice Cream Sandwiches (Allergy-Friendly!)
Looking for the perfect fall dessert that’s cozy, allergy-friendly, and completely dairy-free? These pumpkin spice ice cream sandwiches are a dreamy treat with a festive twist. Instead of the usual cookie base, they’re made with a

crunchy, warmly spiced ginger snap crust that pairs beautifully with the creamy pumpkin filling.
The best part? They’re safe for common allergies—gluten free, dairy-free, egg-free, and nut-free—so everyone can enjoy them.
How They’re Made
Pumpkin spice ice cream: A silky blend of pumpkin puree, non dairy heavy cream, dairy free sweetened condensed milk
Ginger snap crust: Crushed gluten free ginger snaps mixed with vegan butter to hold everything together.
Assembly: Press half the crust mixture into a pan, spread the pumpkin ice cream over it, and top with the rest of the crust. Freeze until firm, then slice into sandwiches.
