Lemon Snowflake Cookies

If you love lemons, these will be your new favorite cookies. They are so soft!
You could easily customize the flavor profile of this recipe by swapping out the lemon zest for a different flavor and adding in a different juice or liquid for the lemon juice. But honestly I love these just the way they are!
I ended up dipping them in powdered sugar after they cooled.

Lemon Snowflake Cookies
2 ½ c gluten free cup for cup flour
1 tsp cornstarch
½ tsp salt
1 tsp baking soda
¾ c dairy free butter
1 c sugar
¼ c applesauce
4 Tbsp lemon juice
Zest of two lemons
2 tsp vanilla extract
1 c powdered sugar, for rolling
Mix together dry ingredients: flour, cornstarch, salt, baking soda. Set aside.
Using a mixer, cream together dairy free butter and sugar until light and fluffy. Beat in applesauce, lemon juice, lemon zest, and vanilla extract.
Add in flour mixture and mix until smooth.
Cover bowl with plastic wrap and refrigerate 2 hours.
When ready to bake, preheat oven to 350. Line a baking sheet with parchment paper.
Scoop Tbsp sized balls of dough and roll until smooth. Roll in powdered sugar.
Place on baking sheet 3" apart. Flatten cookies slightly before baking.
Bake for 11-12 minutes or until edges of cookies are lightly golden.
Let cool on pan at least 5 minutes.
