Easy Dairy Free Mashed Potatoes (Instapot!)

6-8 large russet potatoes, peeled and cut in quarters
Salt and pepper
Chicken broth or non dairy milk
Dairy free butter
Dairy free sour cream (optional)
Placed peeled and cut potatoes in bottom of instapot. Sprinkle with salt. Cover with water until potatoes are just covered.
Place lid on instapot. Make sure valve is on “seal” setting.
Cook on manual pressure for 8 minutes.
Quick release the pressure. Drain potatoes and return to pot.
Add 1/2 stick vegan butter. Begin to mash potatoes. Add chicken broth or non dairy milk a little at a time until desired creaminess.
For extra creamy potatoes, add non dairy sour cream.
Add salt, pepper, and garlic to taste.
