Cinnamon Apple Muffins

My family loves these muffins. It’s so easy to double these and make a giant batch to freeze or to last all week! This is one of the first recipes I tweaked to “make allergy free” many, many years ago and I’ve been making it ever since. :)


A few notes about the recipe: if you are allergic to flax, you can sub for a different egg replacer. To do so, omit the flax and 1/4 c water and sub a different egg replacer for 3 eggs.


You can use whatever oil is your favorite! I prefer avocado or coconut but any oil can work.


I use both quick or rolled oats. I’m not sure which I prefer. Both can work!


I used unsweetened applesauce- but regular can work if that’s all you have!


All that to say - this recipe is very forgiving. I’ve made so many variations over the years and they all have been tasty.
